I love sharing recipes and its much more fun to share them with some of your favorite gals!
It’s easy to get in a “Summer slump” when it comes to weeknight cooking. We all want to stay outside a little longer in the evenings and no one wants to be in the kitchen prepping for more than 30 minutes to an hour. So I compiled some favorite easy Summer recipes from close girlfriends and family and put them right here to make Summer dinner a little easier!
Sheet pan meals are a go to for my friend @Kristiellyodphotography. She loves mixing them up but mostly her go to recipes are simple with a meat and a few veggies. My friend Bevin (@bevinlyle) is gluten intolerant and has to prep meals that work with her dietary restrictions. She is a fabulous cook and does a great job at finding recipes for her family that seem “normal” but that also don’t contain gluten. Most meals she makes are even considered paleo as well. She loves to follow Danielle Walker who writes the cookbook Against All Grain. This is a great option for someone looking for easy and great meals that needs gluten free options.
Bevin’s go-to Summer weeknight recipe is an Instant Pot Sesame-Orange Chicken recipe. She puts it over cauliflower rice or jasmine rice for a 20 minute ready to eat meal!
Allie (@alliebabbitt) is one of the most diligent people I know when it comes to eating healthy and staying consistent on that train. Her families to-go weeknight dinner is a healthy take on the famous P.F. Changs lettuce wraps! Check out the recipe here!
A fun and bright Chicken Margherita dinner in a cast iron is Hannah’s (@hanns_in_the_air) easy dinner go-to! Hannah is one to always have a guest in town staying the night or a couple of months. This dish can easily feed one person with left overs or a group of people!
Allison (@allicrutch430) and her husband are back and forth to the lake most weekends in the summer. Having a meal that can be easily prepped and cooked at both locations is key for these two! Allison’s go to meal of choice is a crockpot dinner meal with a boneless pork loin, a jar of pepperoncini peppers, 1 packet of ranch dressing mix & 1 packet of zesty italian dressing mix. Throw it all together in the crock pot for 6-8hrs on low and you are coming in from the lake ready for dinner!
