Favorite Summer Recipes- The Mom’s Edition

These two, they know how to cook and they know how to host!

Like i’ve said before, both sets of parents live close and most weeks we are having dinner with one if not both sets. We enjoy that so much and I love learning recipes from both mommas. I asked both Cindy (Judd’s mom) and Kimberly (my mom) what their favorite Summer recipes are to cook and enjoy and this is what they said!

My mom, Kimberly gave me two of her and my dad’s quick summer favorites! One recipe is a Greek-Style Chicken grilled with feta, kalamata olives, fresh lemon juice, and Italian herbs. Mom loves to grab this recipe when having guests over! It’s bright, colorful, and feels like an outdoor summer meal. Setting a fun table with wild flowers and neutral placemats and you are ready for your guests!

Another family favorite is an Easy Pork Chop Sheet Pan meal. One pan, a couple pork chops, potatoes, baby carrots, and green beans. You can’t beat something that easy!

Pair this dish with a vegetable of choice and a glass of Chardonnay.

Cindy, my mother in-law has an incredible garden and loves using fresh veggies from it when choosing meals for their weeknight dinners. Her first go-to is a take on a caprese salad with burrata cheese. Garden tomatoes, fresh cut basil, olive oil, and garlic. Grab the recipe here.

The second dish is a Black Bean Salad. Cindy loves to make this for group events or even just to have as a “snack bite” dinner with tortilla chips! Made with fresh tomatoes, black beans, corn and onion. In Cindy’s words “grab this salad, a few girlfriends and a chilled wine and you have the perfect summer evening on the deck!”

Burrata Caprese Salad.

Grab a colorful table cloth, a few cut meats on a butcher block board and you are ready to enjoy a night on the patio.
